Easy Paleo Pecan Banana Muffins Snack

Ingredients

  • 2-3 spotty bananas
  • 2 eggs
  • 1/4 cup avocado oil
  • 1-2 tbsp coconut sugar
  • 1 tsp vanilla
  • 1 1/4 cups almond flour
  • 1 tsp baking soda
  • sprinkle of salt
  • 1/2 cup chopped pecans

Preparation

  1. Preheat oven to 350 degrees

  2. Mash 2-3 spotty bananas in a large bowl

  3. Stir in 2 eggs, 1/4 cup avocado oil, 1-2 tbsp coconut sugar (use 1 if less sweet preferred, 2 if sweeter desired), and 1 tsp vanilla

  4. Stir in 1 1/4 cups almond flour, 1 tsp baking soda, and a sprinkle of salt

  5. Fold in 1/2 cup chopped pecans

  6. Scoop batter into a well-greased muffin tin

  7. Bake for 22 minutes
