Vegetable Spring Rolls with Mixed Veggies

Ingredients

  • 1 tablespoon oil
  • 2 tablespoons spring onions
  • 1 clove garlic
  • 1 cup shredded eggplant
  • 1 cup shredded cabbage
  • 1 cup shredded carrot
  • 1 small spring onion
  • 1/2 tablespoon salt and pepper

Preparation

  1. Finely chop all the vegetables and cook on a warm pan.

  2. Use 3-4 round flour wrappers, add them into a bowl of water.

  3. Place the filling, wrap and cook in oil for frying.

  4. Serve the vegetable rolls with your own dip or sweet chili sauce for dipping.
