Apple Cinnamon Pancakes with Compote
Ingredients
Pancakes
- 1/2 apple, grated
- 1 tsp Schwartz ground cinnamon
- 1 egg
- 3 tbsp spelt flour
- 2 tbsp plant milk
- a dash of vanilla extract
Compote
- 1/2 apple, diced
- desired amount of Schwartz ground cinnamon
- 1 tbsp maple syrup
Preparation
Prepare the compote: In a saucepan, combine diced apple, ground cinnamon, and maple syrup. Cook over medium heat until apples are soft.
Make the pancake batter: In a bowl, mix grated apple, ground cinnamon, egg, spelt flour, plant milk, and vanilla extract until well combined.
Cook the pancakes: Heat a non-stick pan over medium heat. Pour batter to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown.
Serve: Top the pancakes with the apple compote.
