Apple Cinnamon Pancakes with Compote

Ingredients

Pancakes

  • 1/2 apple, grated
  • 1 tsp Schwartz ground cinnamon
  • 1 egg
  • 3 tbsp spelt flour
  • 2 tbsp plant milk
  • a dash of vanilla extract

Compote

  • 1/2 apple, diced
  • desired amount of Schwartz ground cinnamon
  • 1 tbsp maple syrup

Preparation

  1. Prepare the compote: In a saucepan, combine diced apple, ground cinnamon, and maple syrup. Cook over medium heat until apples are soft.

  2. Make the pancake batter: In a bowl, mix grated apple, ground cinnamon, egg, spelt flour, plant milk, and vanilla extract until well combined.

  3. Cook the pancakes: Heat a non-stick pan over medium heat. Pour batter to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown.

  4. Serve: Top the pancakes with the apple compote.
