Vegan Baked Apple Oatmeal

Ingredients

  • 2 cups rolled old-fashioned oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 2 cups plant-based milk
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 tablespoon ground flaxseed
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup diced apple, divided
  • 1/2 cup raisins

Preparation

  1. Preheat oven to 180°C

  2. In a large bowl, mix together the oats, cinnamon, baking powder, and salt

  3. In another bowl, combine the plant-based milk, applesauce, maple syrup, flaxseed, coconut oil, and vanilla extract

  4. Stir the wet ingredients into the dry ingredients until well combined

  5. Fold in half of the diced apple and the raisins

  6. Pour the mixture into a greased baking dish and top with the remaining diced apple

  7. Bake for 35 minutes or until golden and set
