Pink Lady Apple and Coconut Overnight Oats
Ingredients
- 1 Pink Lady® apple, grated
- 130g jumbo oats
- 1 tsp. vanilla extract
- 20g coconut chips
- 300ml coconut milk
To serve
- 1 Pink Lady® apple
- 2 tbsp. coconut yoghurt
- 2 tsps. coconut chips
Preparation
Grate one Pink Lady® apple and place it into a large container with a lid.
Add the jumbo oats and coconut chips and stir.
Pour over the coconut milk and add the vanilla extract.
Stir thoroughly.
Place the lid on the container and leave in the fridge overnight.
In the morning, remove the overnight oats from the fridge and give them a good stir.
Divide the oats between two glasses.
Add coconut chips, a spoonful of coconut yoghurt, and fresh slices of Pink Lady® apple.
