- You will need
- For tomato sauce
- 2 tbsp oil
- 1 large onion
- 4 cloves of garlic
- 1 tsp salt (adjust to taste)
- 1 can of chopped tomatoes
- 4 fresh tomatoes chopped
- sprig of fresh basil finely sliced
- 1/2 tsp mixed herbs
- 1 tsp dried oregano
- 3/4 tsp black pepper
- For frying aubergine
- 4 aubergine
- oil as needed
- salt as needed
- For cheese sauce
- 3 tbsp butter
- 3 tbsp plain flour
- 300ml milk
- 150g mature cheddar
- For layering
- 6 cooked lasagne sheets
- Tortilla chips for topping
