Baked Carrot Fries

Ingredients

  • 10-12 medium carrots
  • 1 1/2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme
  • optional: 1 tsp nutritional yeast to add a cheesy flavour

Preparation

  1. Turn the oven to 200°c

  2. Start by washing the carrots and peeling them (peeling is optional

  3. If you use organic carrots then peeling is not necessary)

  4. Cut the carrots into even sticks that are roughly 5 cm long and 1cm thick

  5. Put the cut carrots into a bowl and drizzle with olive oil

  6. Then sprinkle the salt, pepper, herbs and spices on top

  7. Stir the carrots to evenly coat with the oil and spices

  8. Place the carrots on a baking tray lined with parchment paper

  9. Make sure the carrots are evenly spread and not stacked on top of each other

  10. Put the carrots in the oven and bake for about 25-35 minutes, checking halfway through to move the carrots around or flip them on the sheet to get even cooking

  11. Once you can pierce the carrots easily with a fork and there is a slight browning/crisping on the edges, they are done

  12. Remove them from the oven and allow to cool for a few minutes

  13. Test these out and let me know how you go
