Banana & Coconut Baked Oatmeal

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1 cup plantbased milk
  • 2 tbsp shredded coconut
  • 1 flax egg (1 tbsp flaxseed with 3 tbsp water)
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp vanilla
  • 1/8 tsp nutmeg
  • 1/8 tsp salt
  • coconut flakes

Preparation

  1. Preheat your oven to 175°C or 350°F

  2. Lightly grease your baking dish (optional

  3. I didn't have to)

  4. In a mixing bowl, mix together the rolled oats, shredded coconut, cinnamon, baking powder, vanilla, nutmeg and salt

  5. In a seperate bowl, mash 1,5 banana and then add the rest of the wet ingredients

  6. Throw in the dry ingredients and mix well

  7. Pour the mixture into the baking dish and add the rest of the banana on top

  8. Bake for 20-25min

  9. Serve immediately and don't forget to sprinkle some coconut flakes on top
