Banana Peanut Butter Quesadilla

Ingredients

  • 2 taco size whole wheat or sprouted grain tortillas
  • peanut butter
  • sprinkle of ground flax seed
  • sprinkle of unsweetened shredded coconut
  • half of a banana cut into thin slices

Preparation

  1. Spread peanut butter on each tortilla

  2. On one tortilla, sprinkle coconut and flax over the peanut butter

  3. Top with banana slices

  4. Top with second tortilla

  5. Cut into triangles and serve

  6. Store any leftovers in the refrigerator and serve for breakfast or snack the following day
