Lemon Mug Cake with Peanut Caramel Sauce

Ingredients

  • 10 g cashew butter
  • 40 g apple puree
  • 60 ml almond milk or other
  • 40 g spelt or wheat flour
  • 1/3 teaspoon baking powder
  • zest of 1/3 lemon
  • oil for the mug

Sauce components

  • 1 tablespoon peanut butter
  • 2 teaspoons coconut blossom syrup or other
  • warm water if too thick

Preparation

  1. Prepare the mug with oil or vegan margarine.

  2. Mix all cake ingredients and fill into the mug.

  3. Bake in the microwave for 2-4 minutes depending on mug and microwave.

  4. Eat directly from the mug or turn it out.

Sauce making

  1. Mix peanut butter and coconut blossom syrup.

  2. If too thick, add warm water and stir well.
