Bbq Jackfruit

Ingredients

  • bbq jackfruit
  • 2 cans @clearspringafrica young green jackfruit in water
  • 1 brown onion finely sliced
  • 1 cup veg stock
  • 2 tbsp coconut sugar
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp chilli powder
  • 1 cup bbq sauce
  • 2 tbs olive oil

Preparation

  1. Preheat the oven to 200 C

  2. Mix together the sugar, paprika, garlic powder, salt, pepper and chili powder. Rinse, drain and remove the core of the jackfruit. Toss in the seasoning to coat well. Heat the oil in a large dutch oven over medium heat. Add the onion and sauté until translucent. Add the seasoned jackfruit and cook for a couple of minutes. Now add the veg stock, stir and reduce heat to low-medium and cook for about 15 mins stirring occasionally until the jackfruit is soft enough to pull apart with two forks to shred. Now add the barbecue sauce and place in the oven with a lid on for 10 minutes. Remove the lid and roast for a further 10 minutes until golden. Add more barbecue sauce if you like it saucier
