Beetroot Pesto
Ingredients
- 200 gram cooked beets (which is exactly one package of love beets)
- 1/2 cup pumpkin seeds
- 2 cloves garlic
- 2 tbsp walnut oil
- 2 tbsp nutritional yeast
- salt and pepper to taste
Preparation
In case you’re not using Love Beets, add 2 tbsp red wine vinegar as well since Love Beets are already marinated in vinegar
Add the pumpkin seeds and garlic to a food processor and pulse until they form a fine meal
Add the beets, walnut oil, and nutritional yeast
Mix until you have a smooth pesto
Add salt and pepper to taste
