Beetroot Pesto

Ingredients

  • 200 gram cooked beets (which is exactly one package of love beets)
  • 1/2 cup pumpkin seeds
  • 2 cloves garlic
  • 2 tbsp walnut oil
  • 2 tbsp nutritional yeast
  • salt and pepper to taste

Preparation

  1. In case you’re not using Love Beets, add 2 tbsp red wine vinegar as well since Love Beets are already marinated in vinegar

  2. Add the pumpkin seeds and garlic to a food processor and pulse until they form a fine meal

  3. Add the beets, walnut oil, and nutritional yeast

  4. Mix until you have a smooth pesto

  5. Add salt and pepper to taste
