Brownies

Ingredients

  • • 1 can/240g drained and rinsed lentils (can sub beans)
  • • 4 egg whites/2 whole eggs
  • • 40g protein powder (I used whey but any will work)
  • • 50g coconut flour
  • • 25g flaxseed flour/ground flaxseeds
  • • 20g nut butter
  • • 1 tbsp beef gelatin
  • • 80ml or 1/3 cup coco latte bone broth
  • • 100g banana/steamed pumpkin/steamed sweet potato (about 1 banana)
  • • 80g zucchini (1 large, 2 med)
  • • 180ml milk of choice (I used almond)
  • • 1 tbsp/4g psyllium husk
  • • 1 tbsp vanilla extract
  • • 1/2 tsp salt, 1 tsp baking powder, 1/2 tsp baking soda
  • • 1/2 tsp xanthum gum (optional)
  • • 4 tbsp sweetener of choice (to taste)
  • • 50g chopped up sugar free chocolate

Preparation

  1. Blend everything except for the flaxseed, husk, xanthum gum and coconut flour

  2. Add the coconut flour and blend again

  3. Add the rest of the ingredients and blend again

  4. Stir through the choc chips

  5. Bake at 170 degrees for 35 mins or until a knife comes out clean
