Cake Energy Bites
Ingredients
- ▫️1 cup homemade gluten-free oat flour (ground oats in my mini food processor)
- ▫️1 cup super fine almond flour (from blanched almonds)
- ▫️1/4 teaspoon fine grain sea salt
- ▫️1 cup raw, creamy almond butter (make sure it is runny - new jars work best)
- ▫️1/4 cup maple syrup
- ▫️1 teaspoon pure vanilla extract
- ▫️1/4 cup dye-free vegan sprinkles
Preparation
Use a cookie scoop or your hands to form the dough into small balls (~1.5 tablespoons in diameter). Enjoy right away at room temperature or place in a storage container in your fridge. . ❄️These are also freezer friendly - to freeze, I place non-bleach parchment paper or wax paper on a small baking sheet and place that in the freezer or an even surface until frozen solid. Once fully frozen you can place the energy bites in an airtight container where they touch and place that container back in your freezer
Before enjoying, allow the energy bites to thaw out at room temperature for a couple of minutes. Sometimes I like to enjoy them straight out of the freezer and don't mind the hard texture. Up to you
Tip: I like to store 3-4 energy bites together in a small container in my freezer so I can grab one small container on my way out for an easy on-the-go snack. For everyday snacking I leave out the sprinkles
