Colorful Rainbow Layer Birthday Cake

Ingredients

Cake layers

  • 200 g softened butter
  • 160 g granulated sugar
  • 1 packet vanilla sugar
  • 5 large eggs
  • 400 g all-purpose flour
  • 1 packet baking powder
  • A pinch of salt
  • 1 teaspoon lemon zest
  • 250 ml milk
  • Red food coloring
  • Yellow food coloring
  • Green food coloring
  • Blue food coloring

Frosting and toppings

  • 600 g cream cheese
  • 250 g softened butter
  • 120 g powdered sugar
  • Colorful sprinkles

Preparation

  1. Cream together softened butter, granulated sugar, and vanilla sugar until light and fluffy

  2. Add eggs one at a time, mixing well after each addition

  3. In a separate bowl, whisk together flour, baking powder, salt, and lemon zest

  4. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour mixture, and mix until smooth

  5. Divide the batter evenly among 6 bowls

  6. Add food coloring to each bowl to create 6 different colors using red, yellow, green, and blue, mixing red with yellow for orange and blue with red for purple

  7. Grease a 20 cm springform pan and preheat oven to 180°C conventional or 160°C convection

  8. Pour one portion of colored batter into the pan and smooth the top

  9. Bake for 15 to 20 minutes until a toothpick inserted comes out clean

  10. Let the cake layer cool in the pan for 10 minutes, then remove and cool completely

  11. Repeat with remaining batters to make 6 layers

  12. Drain cream cheese well and beat with softened butter and powdered sugar until smooth

  13. Place one cake layer on a serving plate and spread about 2 to 3 tablespoons of frosting evenly over the top

  14. Add the next cake layer and repeat until all layers are stacked

  15. Frost the top and sides of the cake with remaining frosting

  16. Decorate with colorful sprinkles

  17. Refrigerate until ready to serve

Tips

  1. Line the bottom of the springform pan with parchment paper to prevent sticking and allow easy removal after baking
