Colorful Rainbow Layer Birthday Cake
Ingredients
Cake layers
- 200 g softened butter
- 160 g granulated sugar
- 1 packet vanilla sugar
- 5 large eggs
- 400 g all-purpose flour
- 1 packet baking powder
- A pinch of salt
- 1 teaspoon lemon zest
- 250 ml milk
- Red food coloring
- Yellow food coloring
- Green food coloring
- Blue food coloring
Frosting and toppings
- 600 g cream cheese
- 250 g softened butter
- 120 g powdered sugar
- Colorful sprinkles
Preparation
Cream together softened butter, granulated sugar, and vanilla sugar until light and fluffy
Add eggs one at a time, mixing well after each addition
In a separate bowl, whisk together flour, baking powder, salt, and lemon zest
Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour mixture, and mix until smooth
Divide the batter evenly among 6 bowls
Add food coloring to each bowl to create 6 different colors using red, yellow, green, and blue, mixing red with yellow for orange and blue with red for purple
Grease a 20 cm springform pan and preheat oven to 180°C conventional or 160°C convection
Pour one portion of colored batter into the pan and smooth the top
Bake for 15 to 20 minutes until a toothpick inserted comes out clean
Let the cake layer cool in the pan for 10 minutes, then remove and cool completely
Repeat with remaining batters to make 6 layers
Drain cream cheese well and beat with softened butter and powdered sugar until smooth
Place one cake layer on a serving plate and spread about 2 to 3 tablespoons of frosting evenly over the top
Add the next cake layer and repeat until all layers are stacked
Frost the top and sides of the cake with remaining frosting
Decorate with colorful sprinkles
Refrigerate until ready to serve
Tips
Line the bottom of the springform pan with parchment paper to prevent sticking and allow easy removal after baking
