Super Mario Themed Lemon Layer Cake with Fondant

Ingredients

For the stars

  • 20 g yellow fondant
  • Black food coloring pen

For the plants

  • 30 g green fondant
  • 20 g red fondant
  • 10 g white fondant

For the mushrooms

  • 30 g beige fondant
  • 60 g red fondant
  • 10 g white fondant

For the gold coins

  • 30 g beige fondant
  • Golden food coloring powder
  • Super Mario cake topper, about 6 cm height

Cake layers

  • 300 g soft butter
  • 300 g sugar
  • Pinch of salt
  • 7 medium eggs
  • Zest of 4 organic lemons
  • 350 g all-purpose flour
  • 3 1/2 tsp baking powder
  • 60 ml milk

Buttercream

  • 180 g sugar
  • 50 ml water
  • 3 egg whites
  • 300 g butter, room temperature
  • Blue food coloring, fat-soluble

Additional

  • Vegetable shortening, for working
  • Cornstarch, for working
  • Butter, for greasing pans

Preparation

Fondant decorations

  1. Roll out yellow fondant thinly and cut out 3 small and 3 large stars

  2. Let the stars dry completely, then paint eyes with black food coloring pen

  3. From green fondant, shape 3 flower pots, 6 leaves, and 3 stems for the carnivorous plants

  4. Cut 3 circles from red fondant and cut out a wedge for the mouth of each plant

  5. Cut about 15 small circles and 12 thin strips from white fondant for the plants' mouths

  6. Attach the white circles and strips to the red circles using edible glue

Cake layers

  1. Preheat oven to 180°C (350°F). Grease and flour two 9-inch round cake pans

  2. In a large bowl, cream together butter, sugar, and salt until light and fluffy

  3. Add eggs one at a time, beating well after each addition

  4. Mix in lemon zest

  5. In a separate bowl, whisk together flour and baking powder

  6. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with flour mixture, mixing until just combined

  7. Divide batter between prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean

  8. Let cool in pans for 10 minutes, then remove to wire racks to cool completely

Buttercream

  1. In a small saucepan, combine sugar and water. Heat over medium until sugar dissolves and mixture reaches 118°C (244°F)

  2. While sugar syrup is heating, beat egg whites in a heatproof bowl until stiff peaks form

  3. With mixer running, slowly pour hot syrup into egg whites. Continue beating until mixture is cool and forms stiff peaks

  4. Switch to paddle attachment and add butter one piece at a time, beating until smooth

  5. Add blue food coloring and mix until uniform

Assembly

  1. Place one cake layer on a serving plate. Spread a layer of buttercream

  2. Top with second cake layer and spread more buttercream on top

  3. Cover the entire cake with a thin crumb coat of buttercream and refrigerate for 30 minutes

  4. Apply a final layer of buttercream and smooth the sides and top

  5. Arrange the fondant stars, plants, mushrooms, and gold coins on the cake as desired

  6. Place the Super Mario cake topper in the center

Tips

  1. You can color fondant in the given amounts with corresponding food colors and store airtight

  2. Use a little vegetable shortening and cornstarch on hands when working with fondant to prevent sticking
