Easy Vegan Christmas Cupcakes

Ingredients

  • 1 1/2 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1/2 cup coconut oil
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Frosting

  • 1/2 cup vegan butter
  • 1 1/2 cup powdered sugar

Decorations

  • pretzel sticks
  • chocolate
  • sprinkles
  • coconut shreds

Preparation

  1. Mix almond milk and apple cider vinegar and let it sit for about 5-10 minutes.

  2. Mix the rest of the wet ingredients with the almond and apple cider vinegar mixture.

  3. Mix all dry ingredients.

  4. Combine wet and dry ingredients and mix well.

  5. Line a muffin pan with baking cups and pour the mixture.

  6. Bake at 350 degrees for about 20 minutes or until they look fluffy and a toothpick comes out clean.

Frosting

  1. Mix vegan butter with a hand mixer.

  2. Slowly add powdered sugar.

  3. Spread the frosting on the cupcakes.

  4. Sprinkle coconut shreds on top.

Decorating

  1. Use pretzel sticks and melted chocolate to form a Christmas tree shape by drizzling the chocolate on top.

  2. Add sprinkles and coconut shreds to the decorations.

  3. Refrigerate them for an hour.
