Easy Vegan Christmas Cupcakes
Ingredients
- 1 1/2 cup almond milk
- 1 tablespoon apple cider vinegar
- 1/2 cup coconut oil
- 2 teaspoons vanilla extract
- 2 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Frosting
- 1/2 cup vegan butter
- 1 1/2 cup powdered sugar
Decorations
- pretzel sticks
- chocolate
- sprinkles
- coconut shreds
Preparation
Mix almond milk and apple cider vinegar and let it sit for about 5-10 minutes.
Mix the rest of the wet ingredients with the almond and apple cider vinegar mixture.
Mix all dry ingredients.
Combine wet and dry ingredients and mix well.
Line a muffin pan with baking cups and pour the mixture.
Bake at 350 degrees for about 20 minutes or until they look fluffy and a toothpick comes out clean.
Frosting
Mix vegan butter with a hand mixer.
Slowly add powdered sugar.
Spread the frosting on the cupcakes.
Sprinkle coconut shreds on top.
Decorating
Use pretzel sticks and melted chocolate to form a Christmas tree shape by drizzling the chocolate on top.
Add sprinkles and coconut shreds to the decorations.
Refrigerate them for an hour.
