Easy Vegan Comforting Dinner

Ingredients

  • I used about 1 cup of dried black lentils (the black lentils gave it that rich colour)
  • 1 red onion
  • garlic
  • 1 large carrot
  • handful of shiitake mushrooms
  • 600g tomato passata
  • 300ml water
  • 1 veg stock cube
  • 1 generous tbsp miso paste (or sundried tomato paste)
  • dried oregano
  • dried parsley
  • salt and black pepper. Cook for 30-40 mins until lentils are ready
  • add more water only if needed
  • it can vary when cooking with dried lentils. Simple and quick delicious dinner ?. Mix in with some spaghetti
  • fresh parsley
  • sprinkling of nutritional yeast and likkle drizzle high quality extra virgin olive oil ??You could add spinach
  • broccoli
  • courgettes
  • aubergines
  • so many different vegetables depending on what’s in the fridge
