

Ingredients
- I used about 1 cup of dried black lentils (the black lentils gave it that rich colour)
- 1 red onion
- garlic
- 1 large carrot
- handful of shiitake mushrooms
- 600g tomato passata
- 300ml water
- 1 veg stock cube
- 1 generous tbsp miso paste (or sundried tomato paste)
- dried oregano
- dried parsley
- salt and black pepper. Cook for 30-40 mins until lentils are ready
- add more water only if needed
- it can vary when cooking with dried lentils. Simple and quick delicious dinner ?. Mix in with some spaghetti
- fresh parsley
- sprinkling of nutritional yeast and likkle drizzle high quality extra virgin olive oil ??You could add spinach
- broccoli
- courgettes
- aubergines
- so many different vegetables depending on what’s in the fridge
