Grapefruit Satni

Ingredients

  • 1 grapefruit
  • 3 - 5 cloves of garlic (adjust to taste)_
  • 3 - 6 dried red chillies (adjust to taste)_
  • a handful of fresh coriander
  • salt to taste
  • drizzle of mustard oil

Preparation

  1. Remove the flesh of the grapefruit and discard the pith and seeds

  2. Using a metal skewer, place 3 - 5 cloves of garlic onto the skewer, keep the skin on, and roast over a naked flame. Leaving the skin on will help cook the garlic without burning the cloves. Finely slice once they have cooled

  3. Dry roast 3 - 6 dried chillies in a pan, do not add oil. Make sure the chillies are a dark brown colour all over. Finely slice some fresh coriander

  4. Once the chillies have cooled, crumble them into a bowl along with the garlic and coriander. Mix these three ingredients with salt to get the flavours and juices flowing. Next add the grapefruit and a drizzle of mustard oil and mix together. Serve into small bowls and enjoy as is immediately
