Green Goddess Lasagna

Ingredients

  • Cashews: 1/2 cup
  • Dried currants: 1/2 cup
  • For #raw lasagna
  • Courgettets: 2 cut in thin strips using a vegetable peeler
  • Carrots: 3 large, cut in thin strips with a peeler
  • For green sauce
  • Avocado: 1
  • Mint: 1 cup
  • Coriander: 1 cup
  • Green chilly: 1
  • Cumin seeds: 1 Tbsp
  • Lime juice: juice of 1/2 lime
  • Smoked salt: 1-2 tsp

Preparation

  1. Make sauce by blending together all the listed ingredients

  2. Start layering in a baking dish with layer of courgette topped with sauce, topped with cashews and currants and then a layer of carrots then sauce. Repeat 4-5 times

  3. For top most layer mix remaining sauce with finely chopped courgette and carrots (1/4th cup each) to make green goddess #salsa
