Green Goddess Lasagna
Ingredients
- Cashews: 1/2 cup
- Dried currants: 1/2 cup
- For #raw lasagna
- Courgettets: 2 cut in thin strips using a vegetable peeler
- Carrots: 3 large, cut in thin strips with a peeler
- For green sauce
- Avocado: 1
- Mint: 1 cup
- Coriander: 1 cup
- Green chilly: 1
- Cumin seeds: 1 Tbsp
- Lime juice: juice of 1/2 lime
- Smoked salt: 1-2 tsp
Preparation
Make sauce by blending together all the listed ingredients
Start layering in a baking dish with layer of courgette topped with sauce, topped with cashews and currants and then a layer of carrots then sauce. Repeat 4-5 times
For top most layer mix remaining sauce with finely chopped courgette and carrots (1/4th cup each) to make green goddess #salsa
