Green Spinach and Edamame Fritters with Beetroot Hummus

Ingredients

Green fritters

  • 2 cups grated zucchini
  • 2 cups smashed edamame beans
  • 1 cup finely chopped baby spinach
  • 1/2 cup shredded mint leaves
  • 4 eggs or chia egg substitute
  • 3/4 cup almond flour
  • 1/2 cup nutritional yeast
  • 1/4 cup white chia seeds
  • Salt and pepper

Beetroot hummus

  • 400g can chickpeas drained
  • 2 tablespoons tahini
  • 1 clove garlic crushed
  • Juice of two lemons
  • 2 cups roast beetroot
  • 1 teaspoon cumin
  • Salt and pepper

Preparation

Green fritters

  1. Mix all the ingredients together in a large bowl.

  2. Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat.

  3. Place heaped tablespoons of the mixture into the pan and press slightly to flatten.

  4. Cook for about 3 minutes each side until golden brown.

  5. Repeat until the mixture is finished.

Beetroot hummus

  1. Place the chickpeas, tahini, garlic, lemon juice, beetroot, cumin, salt and pepper in a food processor and process until smooth.
