Green Spinach and Edamame Fritters with Beetroot Hummus
Ingredients
Green fritters
- 2 cups grated zucchini
- 2 cups smashed edamame beans
- 1 cup finely chopped baby spinach
- 1/2 cup shredded mint leaves
- 4 eggs or chia egg substitute
- 3/4 cup almond flour
- 1/2 cup nutritional yeast
- 1/4 cup white chia seeds
- Salt and pepper
Beetroot hummus
- 400g can chickpeas drained
- 2 tablespoons tahini
- 1 clove garlic crushed
- Juice of two lemons
- 2 cups roast beetroot
- 1 teaspoon cumin
- Salt and pepper
Preparation
Green fritters
Mix all the ingredients together in a large bowl.
Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat.
Place heaped tablespoons of the mixture into the pan and press slightly to flatten.
Cook for about 3 minutes each side until golden brown.
Repeat until the mixture is finished.
Beetroot hummus
Place the chickpeas, tahini, garlic, lemon juice, beetroot, cumin, salt and pepper in a food processor and process until smooth.
