Pan Fried Mushrooms and Butter Bean Mash
Ingredients
- (serves 2 adults + 1 toddler)
- 50g unsalted butter
- 300g mushrooms (I used chanterelle + exotic mix)
- 2 cloves garlic, crushed
- 1 can butter beans, drained and rinsed
- Half a lemon, juiced
- Sourdough or other bread
- Fresh parsley, chopped to serve
Preparation
Add a splash of oil to a non stick frying pan along with the butter and 1 crushed garlic clove. Saute for a minute, then add the mushrooms and cook for 3-4 mins until soft. Season with black pepper
In the meantime, put the drained butter beans into another pan with a splash of olive oil and the other garlic clove. Warm the beans through for 2 mins stirring occasionally to stop any sticking. Remove from heat and, using a hand blender, blitz the beans until smooth (adding a little warm water if needed). Add the lemon juice and some black pepper, and blitz again
Slice and toast the sourdough, butter it then spread over some butter bean mash. Top with some mushrooms and a sprinkle of fresh parsley. Enjoy
