Pasta Salada a La Peas

Ingredients

  • 1/2 pound dry pasta (shells orr elbows are ideal)
  • 1 cup frozen peas, cooked and cooled
  • 1/4 cup onions, chopped
  • 1/4 cup vegan parmesan cheese, grated
  • 1 cup vegan mayonnaise
  • 1 teaspoon dijon mustard
  • 1/4 tsp chili power
  • Salt and pepper, to taste

Preparation

  1. Boil the pasta according to the package instructions or until pasta is al dente; drain and rinse with cool water

  2. In a large mixing bowl, combine cooled pasta, peas, onions, parmesan, mayonnaise, mustard, chili powder, salt and pepper to taste. Chill for at least 3-4 hours refrigerator prior to serving
