Pasta Salada a La Peas
Ingredients
- 1/2 pound dry pasta (shells orr elbows are ideal)
- 1 cup frozen peas, cooked and cooled
- 1/4 cup onions, chopped
- 1/4 cup vegan parmesan cheese, grated
- 1 cup vegan mayonnaise
- 1 teaspoon dijon mustard
- 1/4 tsp chili power
- Salt and pepper, to taste
Preparation
Boil the pasta according to the package instructions or until pasta is al dente; drain and rinse with cool water
In a large mixing bowl, combine cooled pasta, peas, onions, parmesan, mayonnaise, mustard, chili powder, salt and pepper to taste. Chill for at least 3-4 hours refrigerator prior to serving
