Sausage Stir Fried Rice

Ingredients

  • sausage stir fried rice
  • you will need:
  • 5 lamb (or vegetarian) sausages
  • 5 - 6 cups of cooked rice
  • 2 tbsp oil
  • 1 large onion
  • salt (to taste)
  • 1.5 tbsp tomato purée
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp oregano
  • coriander to garnish

Preparation

  1. Start by cooking your sausages, either pan fry or grill them, once cooked leave them to cool to one side

  2. Peel and finely slice one large onion

  3. In a large wok, heat 2 tbsp of oil

  4. Once the oil is hot add the onion and fry until brown and caramelised, don't add any salt yet

  5. Once the onion has caramelised add salt (to your taste), 1

  6. Tbsp tomato purée, 1/2 tsp cumin powder, 1/2 tsp coriander powder and 1/2 tsp oregano

  7. Mix and fry for a minute or two

  8. Add 5 - 6 cups of cooked rice, mix well with the onions and fry over a high heat for several minutes

  9. In the meantime slice the sausages and coriander

  10. Add the sliced sausages and fry for a further 2 minutes

  11. Garnish with coriander and serve immediately
