Savory Chickpea Waffles with Veggie Toppings

Ingredients

  • 1.5 cups chickpea flour
  • 1.5 cups water
  • 2 tablespoons olive oil
  • Salt to taste
  • 0.25 cup coarsely chopped coriander leaves, mint leaves, and basil leaves
  • 0.5 teaspoon carom seeds
  • 0.5 teaspoon turmeric powder

Toppings

  • 1 cup chickpeas
  • 1 cup corn
  • Bunch of blanched spinach
  • 1 teaspoon garam masala
  • Cumin seeds
  • 1 teaspoon mango powder
  • 0.5 teaspoon red chili powder
  • 2 tablespoons lemon juice
  • 1 teaspoon turmeric powder

Preparation

  1. In a big bowl, add all the ingredients together and whisk until smooth. Ensure batter is not too thin or too thick. Cover the mixture and let it rest for at least half an hour.

  2. Preheat your waffle iron to medium high.

  3. Mix the batter again to ensure no lumps remain.

  4. Brush the waffle iron with oil or spray. Pour batter onto the waffle iron and cook until golden and crisp.

Topping method

  1. In a pan, add oil and cumin seeds, red chili powder, turmeric, and salt. Let them crackle for a few seconds.

  2. Add chickpeas and corn, mix well. Once done, add lemon juice and garam masala, and cook for another 2 minutes.

  3. Add spinach leaves, mix and cook for a few more seconds.

  4. Enjoy this topping with coconut cream, caramelized onions, and salad.
