Savory Chickpea Waffles with Toppings
Ingredients
- Chickpea flour - 1 1/2 cup
- Water - 1 1/2 cup
- Olive oil - 2 tbsp
- Salt - to taste
- Coriander leaves, mint leaves, basil leaves, chopped coarsely - 1/4 cup
- Carom seeds - 1/2 tsp
- Turmeric powder - 1/2 tsp
Toppings
- Chickpeas - 1 cup
- Corn - 1 cup
- Spinach - 1 bunch, blanched
- Garam masala - 1 tsp
- Cumin seeds
- Mango powder - 1 tsp
- Red chili powder - 1/2 tsp
- Lemon juice - 2 tbsp
- Turmeric powder - 1 tsp
Preparation
In a big bowl, add all the ingredients together and whisk until smooth. Ensure batter is not too thin or too thick. Cover and let rest for at least half an hour.
Preheat your waffle iron to medium high.
Mix the batter again to ensure no lumps remain.
Brush the waffle iron with oil or spray. Pour batter onto waffle iron and cook until golden and crisp.
Cooking toppings
In a pan, add oil, then add cumin seeds, red chili powder, turmeric, salt; let them crackle for a few seconds.
Add chickpeas and corn, mix well.
Once done, add lemon juice and garam masala, cook for another 2 minutes.
Then add spinach leaves, mix and cook for a few seconds.
Enjoy as topping with coconut cream, caramelized onions, and salad.
