Mildly Spiced Indian Style Scrambled Tofu

Ingredients

  • 200 grams crumbled tofu
  • 1 medium onion finely chopped
  • 1 cup frozen or fresh peas
  • 1/4 cup coriander leaves
  • Green chilli (optional)
  • 1/2 teaspoon cumin seeds
  • 1/2 inch finely chopped ginger
  • Salt to taste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon lemon juice or mango powder
  • 1/4 teaspoon red chilli flakes
  • 1 teaspoon garam masala
  • 2 tablespoons oil

Preparation

  1. Crumble tofu and set aside.

  2. In a pan, add oil and cumin seeds; let them turn slightly brown, then add onion and ginger; sauté for 2 to 3 minutes until onions are lightly caramelized.

  3. Add peas and sauté again, adding turmeric powder, mango powder, garam masala, and salt.

  4. Once done, add crumbled tofu; check and adjust salt and spices to taste. Cover the pan with a lid and simmer for a minute, then turn off the heat. Let the flavors infuse.

  5. Remove the lid, mix again, and finally add chopped coriander leaves, green chilli, or red chilli flakes.

  6. Optionally, add some nuts or seeds of your choice.
