Easy Indian Masala Tofu Scramble

Ingredients

  • Tofu - 300 grams (grated)
  • Onion - 1 medium size (diced in small pieces)
  • Cumin seeds - 1 tsp
  • Tomato - 2 medium size (diced)
  • Turmeric powder - 1/2 tsp
  • Garam masala - 1/2 tsp
  • Red chilli powder - 1/2 tsp
  • Salt according to your taste
  • Coriander leaves chopped - 1/3 cup
  • Olive oil - 2 tbsp
  • Black pepper - 1/2 tsp
  • Lemon juice - 2 tsp
  • Peas - 1/2 cup or Edamame beans

Preparation

  1. Squeeze the water from the tofu completely.

  2. Grate tofu and keep it aside.

  3. Heat oil in a pan on medium heat, once the oil is hot, add cumin seeds, let it splutter and then add onion, saute it until it becomes translucent. Then add chopped tomatoes and again saute for 2 minutes.

  4. Now add the spices turmeric powder, red chilli powder, black pepper powder, salt and mix until combined.

  5. After mixing add peas or edamame beans and cook for another 2 minutes on medium heat.

  6. Then add Grated tofu mix well with all the veggies and seasonings. Turn off the heat, sprinkle chopped coriander leaves, add 2tbsp lemon juice and give a final mix. Check your seasoning before you serve.

  7. Serve this with cherry tomatoes, fresh avocado, toasted bread and enjoy!
