Healthy High-Protein Tofu Scramble Breakfast

Ingredients

  • 1/2 tsp cumin seeds
  • 2 handfuls baby spinach leaves
  • 2 tbsp nutritional yeast
  • 1 tsp ground turmeric
  • 1 tsp ground paprika
  • 1/2 tsp curry powder
  • 2 tbsp water
  • 1 pack tofu (300g)
  • About 1 tablespoon cooking oil (garlic infused olive oil)
  • Salt and pepper to taste

Preparation

  1. In a frying pan on medium heat with about 1 tablespoon of cooking oil, add cumin seeds and cook.

  2. Add the spinach and mix in with the cumin seeds. Cook until spinach leaves are wilted, then remove the spinach mixture from the pan and set aside.

  3. Make a spice paste by combining nutritional yeast, turmeric, paprika, curry powder, and water in a small bowl. Mix until fully combined and there are no lumps. Set aside.

  4. Roughly cut the tofu into even-sized pieces about 2-3cm big, then add to a frying pan on medium heat with about 1 tablespoon of oil. Using a spatula, break the tofu into smaller pieces as it's cooking to resemble a scramble.

  5. Add the prepared spice paste to the tofu and mix through. Cook for about 3 minutes, stirring regularly.

  6. Add the spinach mixture back into the pan with the tofu and mix through until evenly combined. Season generously with salt and pepper.

Serving ideas

  1. Serve with toast, hash browns, salads, or in a sandwich.

  2. Can be enjoyed on its own for a quick meal.
