Sticky Ginger and Garlic Tofu

Ingredients

  • Tofu
  • Corn flour
  • Sunflower oil
  • Brown rice
  • Tenderstem broccoli

Ginger garlic sauce

  • 3 tbsp maple syrup
  • 3 tbsp tamari
  • 2 tbsp apple cider vinegar
  • 2 tbsp toasted sesame oil
  • 1 tsp fresh ginger
  • 2-3 cloves garlic
  • 1/4 cup water
  • 1 tbsp cornstarch
  • 1 tbsp water

Preparation

  1. Freeze the tofu in its package, then thaw and squeeze out excess liquid.

  2. Break the tofu into chunks and coat each piece in corn flour.

  3. Shallow fry the tofu in sunflower oil over medium heat until golden and crispy on all sides.

  4. Increase heat to medium-high and add the ginger garlic sauce mixture.

  5. Stir in the cornstarch slurry (made by mixing 1 tbsp cornstarch with 1 tbsp water) and cook until the sauce boils and thickens.

  6. Cook brown rice according to package instructions

  7. Steam tenderstem broccoli until tender

  8. Serve the sticky tofu with brown rice and steamed broccoli.
