Black Pepper Sesame Tofu

Ingredients

  • 1/4 cup tamari or soy sauce*
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 4 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 2-3 tsp freshly ground black pepper
  • 3/4 tsp fresh grated ginger
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds
  • you’ll also need:
  • 1 block extra firm tofu
  • vegetable oil for frying tofu
  • rice or noodles

Preparation

  1. Mix all ingredients for sauce except cornstarch slurry and set aside. make and mix in the slurry just before adding the sauce to your stir fry

  2. Get your rice on or noodles ready to cook so it will be ready at the same time as the stir fry

  3. Break tofu into chunks or cut into cubes. add cornflour to a bowl and generously coat each piece of tofu. heat oil on medium high in a large non-stick frying pan or wok. at least enough oil to fully cover the bottom of the pan. add tofu and fry until golden, turning a few times so all sides get nice and crispy

  4. Prep veg while tofu is frying. peel and slice onion, slice or chop peppers, thinly slice or julienne carrots, etc

  5. When tofu is cooked and crispy, transfer to a bowl and remove excess oil from pan if there’s more than 1-2 tbsp. add veg and stir fry for a few minutes- just enough to soften slightly while still maintaining a bit of a crunch

  6. Mix cornstarch slurry and add to sauce, and once veg is cooked enough, add tofu back to the pan. make sure pan is very hot, then add sauce. it should sizzle and start bubbling right away. (this keeps the tofu from absorbing too much liquid and softening) stir well just to coat tofu and veg in the sauce, then remove from heat and serve on top of rice or noodles

  7. Garnish with sliced spring onion and extra sesame seeds
