Simple Bean Chilli

Ingredients

  • 2 carrots, grated
  • • 1 large diced onion • 1 green pepper, chopped
  • • 1 garlic clove, crushed
  • • 400g chopped tomatoes in a can
  • • 30g tomato purée • 1 tbsp cocoa powder (optional but amazing)
  • • 400g tin black beans, washed and drained • 400g tin kidney beans, washed and drained • 200g tin butter beans, washed and drained
  • • 2 jalapeños chopped (I like the seeds but if you like it less spicy do 1 chilli and deseed it) • 2 tsp chilli powder

Preparation

  1. Sautéed the onion in a pan with water (can use oil if you want) until translucent and add the garlic and continue for another minute. add the carrot, chopped pepper, chopped tomatoes and tomato purée into a large saucepan and add the contents of the frying pan, stir together, season and add the cocoa powder. cook for 15 minutes on a low heat, then add the rest of the ingredients and cook for 10 more minutes. serve over rice or potatoes or whatever carb suits your fancy :) - I adapted this recipe from @deliciouslyella ‘s but this is my fav way to make it
