Vegan Bowl with Beetroot Hummus
Ingredients
- Lettuce
- Roasted zucchini
- Cucumber
- Cherry tomatoes
- Homemade beetroot chips
- Oven roasted chickpeas
- Mushrooms glazed with hoisin maple sauce
- Fresh sprouts
- Beetroot tahini smoked pepper hummus
Hummus
- 1 can chickpeas, drained and rinsed
- 2 pre cooked balls of beetroot
- 1 clove garlic
- 1 tsp hoisin paste
- 2 tbsp tahini
- 2 tsp smoked pepper
- Squeeze of fresh lemon
- Salt and pepper to taste
Preparation
Prepare the hummus by mixing all hummus ingredients until smooth.
Roast zucchini in the oven until tender
Roast chickpeas in the oven until crispy
Glaze mushrooms with hoisin maple sauce and cook until done
Make beetroot chips by baking thin slices of beetroot until crisp
Assemble all ingredients in a bowl
