Sweet Potato Falafel Bowl
Ingredients
- 230g chickpeas, canned or cooked
- 200g steamed or cooked sweet potato
- 1 yellow onion, roughly chopped
- 3 garlic cloves
- handful of fresh herbs of choice (parsley, coriander, or mix of both)
- 2 tbsp of tahini
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp salt, or more to taste
- 1 tbsp sesame seeds (optional)
Preparation
Preheat oven to 210°C.
Place all ingredients except sesame seeds in a food processor and pulse blend until combined but still chunky.
Form about 16 balls with your hands, lightly press them on a baking tray lined with parchment paper, and sprinkle sesame seeds on top if desired.
Bake for 20 minutes or until golden brown and crispy on the outside.
