Sweet Potato Falafel Bowl

Ingredients

  • 230g chickpeas, canned or cooked
  • 200g steamed or cooked sweet potato
  • 1 yellow onion, roughly chopped
  • 3 garlic cloves
  • handful of fresh herbs of choice (parsley, coriander, or mix of both)
  • 2 tbsp of tahini
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp salt, or more to taste
  • 1 tbsp sesame seeds (optional)

Preparation

  1. Preheat oven to 210°C.

  2. Place all ingredients except sesame seeds in a food processor and pulse blend until combined but still chunky.

  3. Form about 16 balls with your hands, lightly press them on a baking tray lined with parchment paper, and sprinkle sesame seeds on top if desired.

  4. Bake for 20 minutes or until golden brown and crispy on the outside.
