Vegan Gluten-Free Falafel Bites
Ingredients
- 1 x 400g can of chickpeas, washed and rinsed
- 1 large shallot, chopped
- 3 garlic cloves
- 1 cup parsley, stems removed
- 1 cup precooked quinoa
- 3 tablespoons chickpea flour
- 2 tablespoons olive oil
- 1 teaspoon hulled tahini
- Salt and pepper to taste
Preparation
Blend the chickpeas, shallots and garlic until roughly chopped
Add remaining ingredients and blend until mixture forms a dough. If a bit too sticky, add in a little more chickpea flour.
Shape dough into 2-inch plops
Place them on a plate and refrigerate for at least 60 minutes.
Preheat oven to 200°C and line a baking tray.
Bake the bites for 30 to 40 minutes, flipping halfway through until falafel is crispy.
Cool for 20 minutes and then serve.
