Vegan Gluten-Free Falafel Bites

Ingredients

  • 1 x 400g can of chickpeas, washed and rinsed
  • 1 large shallot, chopped
  • 3 garlic cloves
  • 1 cup parsley, stems removed
  • 1 cup precooked quinoa
  • 3 tablespoons chickpea flour
  • 2 tablespoons olive oil
  • 1 teaspoon hulled tahini
  • Salt and pepper to taste

Preparation

  1. Blend the chickpeas, shallots and garlic until roughly chopped

  2. Add remaining ingredients and blend until mixture forms a dough. If a bit too sticky, add in a little more chickpea flour.

  3. Shape dough into 2-inch plops

  4. Place them on a plate and refrigerate for at least 60 minutes.

  5. Preheat oven to 200°C and line a baking tray.

  6. Bake the bites for 30 to 40 minutes, flipping halfway through until falafel is crispy.

  7. Cool for 20 minutes and then serve.
