Vegan Egg Fried Pasta
Ingredients
- 1/2 block tofu
- 2-3 tbsp soy sauce
- 1 tsp garlic
- 1 tsp pepper
- 1 tsp curry powder
- 1 tsp smoked paprika
- kidney beans
- frozen peas and carrots
- 3 tbsp chickpea flour
- water as needed
- pasta
Preparation
Cook pasta according to package instructions until al dente
In a bowl, mix tofu, chickpea flour, 1 tsp garlic, 1 tsp pepper, 1 tsp curry powder, 1 tsp smoked paprika, and water to achieve a runny consistency
In a pan, stir-fry the frozen peas, carrots, and kidney beans until tender
Add the tofu mixture and cooked pasta to the pan, then stir in soy sauce and cook until everything is well combined and heated through
