Vegan Hemp Seed Falafel Bowl
Ingredients
- 1 can chickpeas, rinsed and drained
- 1 onion
- 2 garlic cloves
- 1 small bunch of coriander
- 1/4 cup roasted shelled sunflower seeds
- 1/4 cup raw shelled hemp seeds
- 1/4 cup flour (i used whole wheat spelt)
- 1.5 tbsp paprika
- 1 tbsp cumin
- 2 tbsp tahini
- 2 tbsp water
- Salt & pepper
- Extra hemp seeds for the crust
- Oil for frying
Preparation
Add all ingredients to a food processor and blend until you reach a smooth, slightly doughy consistency. Form balls and flatten them a bit. Dip into the extra hemp seeds that you put aside and cover both sides. Cook on medium-high until both sides are golden brown. Cool before eating (they don't fall apart when cooled down). Served with roasted cauliflower (seasoned with Italian spices) and spicy paprika wedges. The sauce is tahini and lemon juice
