Vegan Spiced Apple Loaf Cake

Ingredients

  • 2 1/2 cups of plain flour
  • 2 cups of coconut sugar (or 1 1/2 cup brown sugar)
  • Pinch of salt
  • 1 tsp cinnamon
  • 1 1/2 tsp baking soda
  • 240ml plant based milk
  • 90ml vegetable oil
  • 1 tsp of vanilla extract
  • 1 tbsp vinegar or lemon juice
  • 1/4 cup of unsweetened apple puree
  • 2 apples peeled and finely chopped

Topping

  • Icing sugar mixed with blood orange
  • Crushed pistachio nuts

Preparation

  1. Preheat oven to 180 degrees Celsius

  2. In a large bowl, sift flour, baking soda, and cinnamon. Add a pinch of salt and mix the dry ingredients together

  3. In a separate bowl, mix together plant based milk, vegetable oil, sugar, vanilla extract, vinegar or lemon juice, and apple sauce to combine

  4. Tip in the chopped apples with the wet ingredients

  5. Combine the wet ingredients with the dry and gently mix together. Be careful not to overwork the mixture but still combine all ingredients

  6. Place mixture into a prepared loaf tin and place in the oven for 45 minutes

  7. Do the knife test. Insert a clean knife into the center of the cake. If the knife comes out clean, it's done. If it comes out gummy, place it in the oven for another 10 minutes then check again

  8. Once removed from oven, remove from loaf tin and allow to cool

  9. Prepare the topping by mixing icing sugar with blood orange and crushed pistachio nuts, then apply to the cooled cake
