Blood Orange Chocolate Cake
Ingredients
Wet
- 1/2 cup mild olive oil
- 3/4 cup brewed coffee
- Juice of 3-4 blood oranges
- 1/4 cup oat milk or almond milk
Dry
- 1 cup coconut sugar
- 1 cup regular sugar or coconut sugar
- 2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1 cup cocoa powder
- 1/2 teaspoon pink salt
- 2 teaspoons orange zest
- 1 teaspoon vanilla
Frosting
- One can coconut cream
- 1 ripe avocado
- 1 cup icing sugar
- 3 ounces melted dark chocolate
- 1 teaspoon vanilla powder
- 1/3 cup cocoa powder
Glaze
- 3 ounces dark chocolate
- 2 teaspoons coconut oil
Preparation
Cake
Preheat the oven to 350 degrees Fahrenheit
Combine all wet ingredients in one bowl
Combine dry ingredients in one bowl
Slowly add dry to wet and slowly mix to combine
Place batter equally into two cake pans greased and lined with parchment paper
Bake for 40-45 minutes or until center is cooked and check with toothpick
Frosting
Mix together well and frost as desired
Glaze
Use a double boiler to melt the two and drizzle on top
