Blueberry Bread Pudding

Ingredients

  • 1 teaspoon nutmeg
  • 1 teaspoon ginger
  • 2/3 cup coconut sugar
  • 3 tablespoons ground flaxseed
  • and 1 cup vanilla non dairy milk

Preparation

  1. Cut the loaf into pieces, place in baking dish, mix ‘liquid’ ingredients, pour over bread, and let it set for 15mins

  2. Preheat oven 350

  3. Lightly toss bread, add in the blueberries, cover with foil, and bake for 45 mins

  4. I added vanilla yogurt to the top
