Gingerbread Pecan Peanut Butter Bars
Ingredients
Wet
- 3/4 cup coconut sugar
- 2 tablespoons molasses
- 1 cup runny peanut butter or seed butter
- 1 chia or flax egg
Dry mix
- 1 1/2 cups oat bran
- 1 teaspoon baking powder
- 2 teaspoons ginger powder
- a shake of nutmeg, cinnamon, cloves, and mixed spice
- 1/4 cup coconut flour
Preparation
Mix the wet ingredients together.
In a separate bowl, whisk the dry ingredients.
Combine the wet and dry mixtures, adding a dash of almond milk if necessary.
Fold in 1/2 cup dark chocolate chips and 1/2 cup chopped pecans or nuts of choice if using.
Bake at 180 degrees Celsius for 25 minutes.
