Gingerbread Pecan Peanut Butter Bars

Ingredients

Wet

  • 3/4 cup coconut sugar
  • 2 tablespoons molasses
  • 1 cup runny peanut butter or seed butter
  • 1 chia or flax egg

Dry mix

  • 1 1/2 cups oat bran
  • 1 teaspoon baking powder
  • 2 teaspoons ginger powder
  • a shake of nutmeg, cinnamon, cloves, and mixed spice
  • 1/4 cup coconut flour

Preparation

  1. Mix the wet ingredients together.

  2. In a separate bowl, whisk the dry ingredients.

  3. Combine the wet and dry mixtures, adding a dash of almond milk if necessary.

  4. Fold in 1/2 cup dark chocolate chips and 1/2 cup chopped pecans or nuts of choice if using.

  5. Bake at 180 degrees Celsius for 25 minutes.
