Vegan Gluten-Free Peanut Butter Blondies

Ingredients

  • 1/3 cup coconut oil
  • 1/2 cup peanut butter
  • 1/4 cup rice malt syrup
  • 3/4 cup coconut sugar
  • 2 flax eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup salted and roasted peanuts, roughly chopped plus more to sprinkle on top
  • 1 cup gluten free flour
  • 1 cup almond meal
  • 1 teaspoon baking powder

Preparation

  1. Preheat the oven to 180 and line a square baking dish with parchment paper

  2. In a saucepan melt together the coconut oil, peanut butter and rice malt syrup until runny

  3. Remove from the heat and add in the coconut sugar

  4. Then add the flax eggs, vanilla and sea salt and mix well

  5. Add the flour, almond meal and baking powder and mix well to combine

  6. Pour into the prepared baking dish and smooth out the surface

  7. Sprinkle with chopped peanuts and coconut sugar

  8. Bake in the oven for 25-35 minutes or until a skewer inserted comes out clean, can be greasy but clean

  9. Allow to cool before cutting and enjoy with a side of vegan ice cream
