Vegan Peanut Butter Ice Cream Cookie Sandwiches

Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup coconut sugar
  • 1/2 cup oat flour
  • 1 1/2 tablespoons applesauce
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 2 chopped frozen bananas
  • 2 tablespoons peanut butter
  • 2 tablespoons chocolate chips

Preparation

  1. Mix all cookie ingredients together in a bowl.

  2. Use a cookie scoop to place dough on a greased cookie sheet and flatten with forks.

  3. Bake at 350°F for 10 minutes.

  4. After baking, place cookies in the freezer for an hour.

  5. For the banana nice cream, add chopped frozen bananas and 2 tablespoons peanut butter to a food processor or blender and blend until smooth.

  6. Transfer the mixture to a bowl and stir in chocolate chips.

  7. Assemble sandwiches by placing the nice cream between two cookies.

  8. Freeze the sandwiches for 30 minutes.

  9. Store in the freezer until ready to eat.
