Vegan Peanut Butter Ice Cream Cookie Sandwiches
Ingredients
- 1/2 cup peanut butter
- 1/4 cup coconut sugar
- 1/2 cup oat flour
- 1 1/2 tablespoons applesauce
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 2 chopped frozen bananas
- 2 tablespoons peanut butter
- 2 tablespoons chocolate chips
Preparation
Mix all cookie ingredients together in a bowl.
Use a cookie scoop to place dough on a greased cookie sheet and flatten with forks.
Bake at 350°F for 10 minutes.
After baking, place cookies in the freezer for an hour.
For the banana nice cream, add chopped frozen bananas and 2 tablespoons peanut butter to a food processor or blender and blend until smooth.
Transfer the mixture to a bowl and stir in chocolate chips.
Assemble sandwiches by placing the nice cream between two cookies.
Freeze the sandwiches for 30 minutes.
Store in the freezer until ready to eat.
