The Perfect Vegan Mug Cake
Ingredients
- 6 Tbsp almond flour
- 4 Tbsp oat flour
- 1 Tbsp cornstarch
- 3-4 Tbsp unsweetened cocoa powder
- 1/2 tsp baking powder
- 4 Tbsp water or almond milk
- 1 1/2 Tbsp maple syrup
- 1 Tbsp coconut sugar
- 2 Tbsp chocolate chips
- 1 Tbsp frozen raspberries (optional)
Preparation
Combine all dry ingredients in a bowl and whisk well, making sure to break up lumps. Add 1 tablespoon of the chocolate chips.
Add the water, maple syrup and mix well until the batter is smooth.
Pour batter into a microwave safe coffee mug.
Place in the microwave and cook for 1 min 45 seconds. This was the time it took to achieve perfect cake texture. All microwaves will vary. Depending on your microwave, you may need to change the time to bake to your liking.
Wait 5 minutes before eating. Enjoy!
