Vegan Gluten-Free S’mores Brownie Bars

Ingredients

Cookie base

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 1/2 cup coconut sugar
  • 1/4 cup almond milk
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • Sprinkle of salt

Brownie layer

  • 2 ripe bananas
  • 1/2 cup peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1/4 cup coconut flour
  • 1 1/2 tablespoons vegan vanilla or chocolate protein powder

Toppings

  • 2 cups vegan marshmallows
  • 1/2 cup chocolate chips

Preparation

  1. Preheat oven to 350°F

  2. Mix everything for the cookie base together in a bowl; it will be crumbly but that’s okay

  3. Use your hands and press the cookie base mixture together into a ball

  4. Line a 9x9 brownie pan with parchment paper

  5. Press the cookie base mixture into the pan and pack it together so it doesn’t crumble when it bakes

  6. Bake for 10 minutes at 350°F

  7. Mash the bananas then add in the rest of the brownie layer ingredients and mix with a hand mixer or immersion blender

  8. Add the brownie layer on top of the cookie base when it’s done baking

  9. Return to the oven and bake for 32-35 minutes

  10. Remove from the oven and top with 2 cups marshmallows and 1/2 cup chocolate chips

  11. Put back in the oven on the top rack and broil for 1-2 minutes to toast the marshmallows

  12. Slice and enjoy; store in the fridge
