Cheats Vegan Chocolate Truffles

Ingredients

  • 500g cake mix of choice (adjust according to size)
  • 1 1/4 cups oat milk
  • 1/2 cup apple sauce or dairy-free yogurt of choice
  • 1/2 cup vegan icing or frosting
  • 1 cup dairy-free chocolate

Preparation

  1. Preheat your oven to 180 degrees Celsius and grease a cake tin or pan.

  2. Mix the milk and applesauce or substitute yogurt with the cake mix, add to pans, and cook about 5 or 6 minutes less than box instructions, ensuring the cake is set but not overcooked.

  3. Let the cake cool, then once cooled, beat it with the icing until combined; add some milk if overcooked.

  4. Chill in the fridge, covered, for an hour or two or overnight; alternatively, freeze for 10-15 minutes, then roll into balls of desired size.

  5. Melt the chocolate and drizzle over the balls or dip them in the chocolate, then let set before serving.
