Chocolate Chip Brownie with Vanilla Ice Cream & Salted Chocolate Spoon
Ingredients
- 255g flour
- 1 cup of cacao powder
- 1 tsp baking powder
- Generous pinch of pink/sea salt
- 1 bottle of original Kombucha (275ml) or fizzy drink
- 1 tsp vanilla extract
- 1 cup vegetable oil
- 2 tbsps milled chia/flax seeds soaked in 9 tbsp hot water for 10 minutes
- 1.5 cup coconut sugar
- 180g chocolate chips
Preparation
Preheat oven to 180°C/350°F.
In a large bowl, mix the flour, sugar, salt, cacao powder, and baking powder.
Pour in the Kombucha, oil, vanilla extract, and soaked chia seed mix. Mix thoroughly to combine.
Stir in most of the chocolate chips, reserving a handful for topping.
Pour the mixture into an oiled or lined baking tray, spreading it evenly.
Bake in the center of the oven for 35-40 minutes.
Once baked, remove from the oven and cool the brownie on a wire rack for 15 minutes.
Gently remove the brownie from the tray and cut into squares.
Enjoy the brownie hot or cold.
