Dark Chocolate Coconut Vegan Flapjacks

Ingredients

  • 2 cups oats
  • 3 tablespoons desiccated coconut
  • 2 tablespoons cashew butter
  • 3 tablespoons maple syrup
  • 3 tablespoons coconut oil

Topping

  • 200g vegan dark chocolate
  • 1 teaspoon coconut oil

Preparation

  1. Melt in a heated saucepan the cashew butter, maple syrup and coconut oil.

  2. Once completely melted and combined, pour into a bowl with the oats and coconut.

  3. Line a dish with baking paper and put the combined mixture into the dish and bake in the oven for 15 minutes.

  4. Allow to cool.

  5. Melt the chocolate over the flapjack and leave to cool in the fridge.
