Coconut Brown Rice Pudding
Ingredients
- 1-15oz can of full fat coconut milk
- 1 cup brown rice
- 1/4 cup maple syrup
- 2 tsp vanilla extract
- 2 tsp cinnamon (to taste)
- 1 cup unsweetened almond milk
- pinch of salt (optional)
- 1 cup raisins OR a handful of our Just Natural fruit and nut mix (our favourite!) (optional)
Preparation
Rinse the brown rice under cold water to remove excess starch
In a medium saucepan, combine the brown rice, coconut milk, almond milk, maple syrup, vanilla extract, cinnamon, and salt (if using). Bring to a boil over medium heat
Reduce heat to low, cover, and simmer for 40-50 minutes or until the rice is tender and the mixture thickens, stirring occasionally
If using, stir in the raisins or fruit and nut mix during the last 10 minutes of cooking
Remove from heat and let it cool slightly. Serve topped with fresh fruit and coconut yogurt
