Coconut Yogurt Pancakes with Fruits and Chocolate Spread


  • 70g spelt flour (buckwheat for gf)
  • 30g coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 250g soy yogurt (vanilla or coconut flavor)
  • A pinch of salt
  • Coconut oil (for cooking)
  • Assorted fruits (for topping)
  • Chocolate spread (for topping)


  1. In a mixing bowl, combine the spelt flour, coconut flour, baking powder, baking soda, and a pinch of salt.

  2. Add the soy yogurt to the dry ingredients and mix until a smooth batter forms.

  3. Heat a coated pan over medium heat and add a bit of coconut oil.

  4. Pour a ladleful of the batter onto the pan to form a pancake.

  5. Cook until bubbles form on the surface, then flip the pancake and cook the other side until golden brown.

  6. Repeat the process with the remaining batter, adding more coconut oil to the pan as needed.

  7. Serve the pancakes with assorted fruits on top and a drizzle of chocolate spread.
